Japanese soy sauces mature for almost 2 years in 3-meter wooden barrels .They are dark in color, have a rich fermented aroma and a salty, slightly sweet taste.

If you want to enjoy the natural taste of traditional Japanese soy sauce, choose shoyu or tamari.

Traditional shoyu is made from only water, soybeans, a natural fermentation agent (Aspergillus oryzae), whole wheat and sea salt, while tamari does not contain wheat and is slightly darker color and fuller flavor.

Both shoyu and tamari are full of vitamins, minerals and enzymes. In order to preserve their excellent nutritional values, we recommend using them only at the very end of food preparation, so that they are not spoiled by cooking.
