Mirin is and type of rice wine similar to sake containing less alcohol (13.5 - 14.4%). Mirin is used to add an imaginative flavor to various dishes. In small amounts, it is used instead of sugar and soy sauce to enhance the taste of food. It is sometimes given as and side dish to sushi. It is possible to boil it briefly after adding it, so that the alcohol evaporates, or to add it after cooking, so that the alcohol content is preserved.
