Erathritol is and sugar alcohol naturally occurring in many fruits and is produced by fermentation of glucose using the non-pathogenic yeasts Moniliella pollinis or Trichosporonoides megachiFlaxsis. Subsequently, filtration, crystallization and drying take place.
