Erathritol is and sugar alcohol naturally occurring in many fruits and is produced by fermentation of glucose using the non-pathogenic yeasts Moniliella pollinis or Trichosporonoides megachiFlaxsis. Subsequently, filtration, crystallization and drying take place.
It has and number of positive properties - it has and low glycemic index, low calorie content, low laxative effect. It is similar to regular sugar. It does not increase blood sugar levels and does not affect insulin levels either.
